I’ve neglected this blog for sometime, not that I wanted too. Work, real life and just my overall health have gotten the best of me. In March (2018) I was given the news that I had full blown type 2 diabetes, along with my high blood pressure this was just shocking. After much research and reading on the internet, I came to the conclusion that I need to drop all carbs and sugar. In reality I was already eating low carb, no bread, rice but I still had some pasta. So like I do with all other things I went cold turkey.
I was given a pack of boneless chicken thighs the other night, so I had to do something with them. Lucky for me I have a few things on hand to make this a super cheap dinner and meal prep for the week. Continue reading
