Cinnamon Streusel Muffin

I’m getting fancy on you guys…LOL! My son really loved my cinnamon scones, but I wanted to make something more kid friendly. Enter the Streusel Muffin. (Photo by Joanna Canizales)

Muffin Batter
1 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teapoon salt
1/2 cup milk
1 egg , slightly beaten
3 tablespoons melted butter

Topping
1/4 cup all-purpose flour
2 tablespoons brown sugar
3/4 teaspoon ground cinnamon
2 tablespoons softened butter

Preheat oven to 350, spray muffin tin with non-stick spray (PAN).  In a bowl add Milk egg and melted butter mix well. Then add the dry ingredients to the bowl, don’t overmix. You want a lumpy type batter, set aside while you make the topping. Mix flour, cinnamon and sugar, cut the butter into the dray mix. You should have pea sized dry bits. Add batter to muffin tins and cover with topping. Bake for 16-20 minutes in a normal oven, 20-25 in a toaster oven. =)
